New Year, New You: Chopped Salad with Bumble Bee Tuna {Recipe}

It’s no secret that getting fit and healthy is on my priority list this year, as it is with many people. As a working-outside-the-home mom, I often struggle to think of healthy lunch ideas to eat at work that don’t require a lot of preparation while at work. I don’t mind putting in a little time to prepare it while at home, but once I bring it to work, I surely don’t want to stand in the break room for half of my lunch getting it ready!

I have also stayed away from frozen meals since I was pregnant with Trent. I had an aversion to them and never went back. I think it’s a good thing, though, because not only do I not have to wait in line to use the microwave, but it forces me to not take the easy route and instead, try to bring fresh, not over-processed food for lunch.

One lunch item I enjoy is a chopped salad. Face it, we all know the best part of a salad is when you get to all the small bits at the bottom, why not make an entire salad like that? It’s super easy to make and will usually make enough for at least 2 lunches and a dinner. Adding a protein source, such as tuna or chicken, increases the health benefits and can keep you full even longer…which I definitely need because we got all new vending machines at work and the junk food calls my name by mid-afternoon! And while I like to joke that salads take me longer to eat, that also means that I’m not shoveling food down my throat and I am giving my body time to tell me that I’m full so I don’t overeat.

Without further ado, here is a Delicious Chopped Salad featuring Bumble Bee® Tuna!

Bumblebee tuna Chopped Salad

I used the Solid White Albacore Bumble Bee® Tuna in water for this salad. You can find this, as well as many other Bumble Bee Seafoods varieties, in your local grocery store. This salad would work great with any of your favorite Bumble Bee® product. Available in can or pouch, each Bumble Bee® product is an easy and delicious way to add a variety of nutrients to your diet, including lean protein, healthy fat, and important vitamins and minerals.

Another great thing about chopped salads is that you can make it unique to you! Add however many of your favorite ingredients as you like - just chop everything into bite-size pieces! I kept my salad on the simple side - it included:

  • Spring Mix Lettuce (yup, chop that up into pieces too!)
  • Grape Tomatoes
  • Cucumber
  • Red Onion
  • Craisins
  • And really pretty sweet peppers

You could also add hard-boiled egg, beans, celery, seeds, carrots, low-fat cheese, fruit, quinoa, etc.

Combine all your ingredients into a large bowl and mix it together. Drain the tuna and add it to your salad. Finally, top with your favorite dressing (or have your dressing on the side to dip your fork in for each bite). I enjoyed my salad with a Balsamic Vinaigrette dressing.

You can top the salad with the tuna or mix it all together. After these photos, I ended up mixing it all together so I could get all my ingredients in every spoonful.

Tuna isn’t just for sandwiches! For lunch prep, I would bring my container of salad and either a small container of dressing or the entire bottle (if I knew I was having several days of salads). The tuna can be stored in the same container as the salad; just be sure to consume it within a couple of days. I just pour the dressing on and enjoy at my desk! Yum!
