How to Make a Frozen Chocolate-Covered Banana with Nuts

Here is a “cool” after-school treat inspired by a treat you may have enjoyed in the Disney parks before…a chocolate covered frozen banana with nuts! This treat is often found in the many frozen treat carts throughout Walt Disney World, as well as the other Parks, I’m sure. A healthier, but still delicious, option!

Frozen chocolate-covered banana

For this treat, you will need:

Bananas (that have been in the freezer for several hours)
1 cup refined coconut oil
1.5 cups semisweet or dark chocolate chips
¼ cup light corn syrup
Chopped nuts (optional)

To freeze the bananas, peel them, carefully stick the skewers through them and then place them in a gallon plastic zip bag and into the freezer.

Several hours was a good time limit for us, as we didn’t want them completely frozen and could bite into them easier.

For the chocolate coating, combine the coconut oil, chocolate chips and corn syrup into a microwave-safe bowl and melt at 50% power.

The refined coconut is what makes this recipe work really well with the chocolate; it actually solidifies when below room temperature…meaning that once the chocolate hits the frozen banana, it will solidify and make a hard, crispy chocolate coating on the banana!

Once the mixture has melted, pour it into a tall container so the bananas can be easily dipped.

This chocolate is so good that we used it for other things, like topping for ice cream, so making extra is definitely recommended!

If also covering with nuts, place the chopped nuts onto a plate next to the chocolate.

Dip the bananas into the chocolate and then rolls the nuts on top.

Do you use the corn syrup to sweeten the semi-sweet chocolate? If you use milk chocolate do you need the corn syrup still?
